French Toast With Strawberries and Cream Cheese Drizzle

Now that things are settled down and we’re both living full time in New Paltz, Dan and I were able to reintroduce Awesome Breakfast Saturday into our lives. Last Saturday was particularly awesome because we had a full weekend ahead of us (until we moved I always worked Sundays at the coffee shop). We slept in late, took a walk when we woke up, and then I proceeded to make a delicious brunch.

When I asked Dan earlier in the week what he wanted for breakfast on Saturday, he shouted, “FRENCH TOAST!” and I was like, “Um, okay, that was strangely enthusiastic.” He then went on to specify, “with, like, strawberries and cream cheese!” He then looked at me with a face similar to this:
How could I let him down? I thought about the perfect way to use cream cheese with french toast, and I came up with this:

French Toast with Strawberries and Cream Cheese Drizzle
Serves 2

For the Cream Cheese Drizzle:
2 oz cream cheese at room temperature*
1 tsp vanilla extract
1 Tbsp powdered sugar (or more to taste)
1/4 cup of milk

For the French Toast:
4 thickly cut slices of italian bread
2 eggs
1 tsp vanilla extract
Scant 1/4 cup milk
Butter for greasing your pan

1/2 cup sliced strawberries

In a small bowl, beat the cream cheese, adding milk in slowly until it is a smooth, drizzly consistency. Mix in vanilla and powdered sugar to taste. Set aside.
In a shallow dish, beat your eggs, milk, and vanilla until they are incorporated. Heat a skillet on medium heat and evenly coat the pan with melted butter. Dip both sides of the bread in the egg mixture and place them in the pan. Let cook until the bottom starts to brown, around 3 minutes, and then flip until the other side is done.

That’s all there is to it! Throw your French Toast on a plate, drizzle your cream cheese on top, and add your sliced strawberries on top. This was the best breakfast I’ve had in a long time!

*It is important that your cream cheese be at room temperature in order to get the drizzle to be really smooth. Mine was a bit cold still and I had some lumps!
